What To Bake In A Cast Iron Wedge Pan

Cornbread wedge pans are one of my favorite cast iron pieces to use in my kitchen. The wedge pan can be used for many different things, other than cornbread. The uniqueness of the wedge pan allows your food to become crisp on all three sides. This was actually the intended purpose for the invention of the cornbread wedge pan.

My children love when I use the wedge pan for baking treats. The kids love the cool design that it makes, and the conversations over the dinner table are priceless. Our favorite recipe to make with the wedge pan is brownies.

Here's the recipe:

Sweet Chocolate Brownies

  • 1/2 cup butter melted
  • 1 cup white sugar
  • 1/2 TBSP Tupelo honey
  • 1/2 TBSP Torta Bianca Italian White Cake Vodka
  • 2 large eggs
  • 1/3 cup unsweetened cocoa powder
  • 1/2 all purpose flour
  • 1/4 tsp. salt
  • 1/4 tsp. baking powder

Preheat oven to 350 degrees

In a small cast iron skillet, melt butter and cool.

In a separate step mix eggs, white sugar, and butter. Once they're well combined add cocoa, flour, salt, and baking powder - mix well. Add vodka and honey.

Oil down wedge pan and pour batter into wedged slots. Bake for 20 minutes until tooth pick comes out clean.
